MM Pork Chops

Super easy 1 pan dish. Serve this with a side of rice and eggs and you’ll be on your way to deliciousness


Ingredients (Serves 4)

  • 2 onions halved and sliced

  • 4 bone-in 1/2” - 1” pork chops

The Marinade

  • 1 tablespoon oyster sauce*

  • 1 tablespoon red wine vinegar

  • 3 tablespoons soy sauce

  • 1 teaspoon brown sugar

  • 1 teaspoon sugar

  • 1/2 teaspoon salt & pepper (season to taste)

  • 3 cloves garlic (minced/grated)

  • 1.5 teaspoon garlic chili* sauce


Instructions

Step 1: Combine oyster sauce, red wine vinegar, soy sauce, sugars, salt and pepper, garlic, and garlic chili sauce together. (Marinade may be on the salty side) Add sliced onions and pork chops to the mixture and marinate for at least an hour.

Remove from fridge 30 minutes before cooking to take the chill off the meat.

Step 2: In a large pan, coat the bottom of the pan with olive oil, or a mixture of olive oil and butter on medium-high heat until the oil is shimmering. Add marinated onion slices to the oil. Spread the onions out evenly over the pan and let cook, stirring occasionally. Reserve the pork chop with the marinade for Step 4.

Reduce the heat to medium or medium-low to prevent the onions from burning or drying out.

Step 3: Cook, stirring every few minutes. The goal is to caramelize the onions until they are reduced and sweet. Let the onions cook for 20 - 30, stirring every few minutes. Do not let the onions burn.

Step 4: Once your onions are nicely caramelized, push the onions to one side of the pan then add the pork chops and marinade. On medium-high, sear on one side, without moving pork chops until they are nice and golden brown on the first side, about 3-5 minutes. Flip and sear the other side until browned.

  • The easiest way to check if the pork chop is done is to use a meat thermometer*. When they reach an internal temperature of 135 F degrees they are done.

Step 5: Remove pork chops from the skillet and let them rest on a plate for 10 minutes, during which time they will continue cooking with the residual heat and will eventually reach 145 F degrees. Then cut.

  • Cooking time can vary based on the thickness of the pork chops.

Step 6: Serve caramelized onions and pork chops with rice.
